Thawing a Turkey

Ideally you should buy the turkey one or two days before Thanksgiving in order to assure it’s freshness.
If you buy the turkey and will only prepare it the on the day after, just place it in the refrigerator.
When removing it from the refrigerator let it settle for 30 – 40 minutes to room temperature.

Recipe Ingredients

• 1 whole turkey
• 1 stick of butter
• Pepper and salt
• Dressing that will stuff the turkey

Roasting Your Turkey

1. Pre-heat your oven to 425 degrees
2. Make sure your pan has something that will allow the turkey not to stick to it
3. Place the turkey in the roasting pan with breasts down
4. Cover the turkey with aluminum foil and place it in the oven
5. Check on your turkey every 15 minutes to make sure it’s not too dry. If it seems to dry baste the turkey with butter or some of the juice from the pan.
6. Your turkey should be ready in 30 minutes or when it reaches 165ºF

When your turkey is done let it set outside the oven for about 20 minutes before cutting it and serving it.

• 6 raminhos de alecrim fresco
• 150g manteiga fria
• 15 licenças frescas de sálvia
• 2 raminhos de tomilho fresc

• 4 pernas de borrego, preferencialmente caseiro ou orgânico
• 12 cravinhos de alho
• 2 cenouras grandes, descascadas e cortadas em tiras finas
• 1 cebola descascada e cortada em pedacinhos
• 1 azeitona lavada e cortada ao meio< (li>
• 2 copos de vinho branco

Modo de preparação

Pegue nos dois raminhos de alecrim e passe-os por manteiga temperando com sal e pimenta.
Utilize uma faca pequena e faça um corte horizontal, do topo para o fundo, na perna do cordeiro de forma a criar uma bolsa. Faça isto a todas as pernas colocando o tempero com alecrim, manteiga, sal e pimenta nesses espaços.

Usando papel alumínio, retire uma folha grande para que possa dobrar ao meio criando ficando, depois de dobrado, com o tamanho de uma folha A3 ou de cartolina.
Espalhe o alho e vegetais pela folha de papel alumínio mas crie um montinho no centro da folha.

Esfregue as pernas de borrego com azeite, sal e pimenta colocando de seguida a perna no papel de aluminio no topo do montinho que acabou de criar no centro dessa folha com a perna na vertical.
Puxe os cantos da folha cuidadosamente para cima e em direcção da perna. despeje um pouco de vinho branco em redor da perna fechando de seguida o papel de aluminio em redor da perna de borrego.
Caso entenda que a folha de aluminio é demasiado grande poderá retirar o excesso. Repira o processo para todas as pernas de borrego.

Aqueça o forno a 200ºC (400ºF). Leve ao forno durante aproximadamente duas horas e meia (2h30min) ou até que a carne fique tenra. Sirva as pernas embrulhadas no papel de alumínio para que os convidados os possam abrir.
